Ingredients for High Protein Queso

  • 2 cups low-fat cottage cheese (440g)
  • 1/2 cup shredded Mexican style cheese (55g)
  • 1/2 cup shredded fat-free cheddar cheese (55g)
  • 1/4 cup sliced jalapeños (40g)
  • 1/2 cup skim milk (120ml)
  • 2 tbsp taco seasoning (15g)
  • 1 tbsp cheddar powder (12g)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 8oz cooked 96/4 ground beef (225g)
  • 1/2 cup diced tomatoes and green chilies (120g)

Instructions to Make this Beef Queso Dip

If you’re craving nachos and don’t want to ruin your macros, then make this super easy high protein beef queso dip that’s ready in about 10 minutes. You can have it with some protein tortilla chips or make a bowl or burrito!

Here is how you do it:

  • In a food processor (or blender) add 2 cups low-fat cottage cheese (440g)
  • add 1/2 cup shredded Mexican style cheese (55g)
  • add 1/2 cup shredded fat-free cheddar cheese (55g)
  • add 1/4 cup sliced jalapeños (40g) (optional)
  • add 1/2 cup skim milk (120ml)
  • add 2 tbsp taco seasoning (15g)
  • add 1 tbsp cheddar powder (12g)
  • add 1/2 tsp garlic powder
  • add 1/2 tsp salt
  • Blend until it is smooth and all the same color
  • Transfer to a microwave safe bowl
  • Microwave for 1 to 2 minutes stopping and stirring every 45 seconds
  • Now add 8oz cooked 96/4 ground beef (225g)
  • Stir it up and put back in microwave for additional 45 seconds
  • Then when it is at serving temperature add 1/2 cup diced tomatoes and green chilies (120g)
  • Stir once more and enjoy!
